Mother Rulli's Popover Recipe

3 Large Eggs

1 Cup Milk

2 Tablespoons Butter

1 Teaspoon Salt

1 Cup Sifted All Purpose Flour

Now you have to know that Mrs. Rulli makes fat free popovers. Substituting eggbeaters for the eggs and olive oil for the butter. It helps keep Lino's cholesterol down.

She never said exactly in what order to mix the ingredients. But after mixing let it stand overnight to get the bubbles out. Now only a fool would leave it sit on the counter with eggs and milk in it and such. It has to be placed in the refrigerator.

The pan must be heated before placing the batter in it. So they POPOVER!!!! Now, Mrs. Rulli uses a mini muffin pan because she likes a crusty popover. You can use a regular muffin pan if you like. Spray the pan with pan or Crisco or whatever you use before placing it in the oven to preheat. Once pan in warm, take out, add batter, place back in over, bake for 50 to 60 minutes on 375.
